Though you can't control the Apple TV's output volume for movies, and just music as stated in this article, there is a sort of workaround for those who really wish to have that feature at the cost of organization. It appears that you can also control the volume level for music videos as well as music itself. That being said, one can tag a video as a music video and control the volume using the Apple TV. I'm not entirely sure if this can be done for iTunes store purchased films.

An easier workaround is simply to program a third party remote for use with your Apple TV which maintains the functionality of controlling your TV/AV volume output. That way you can control both the Apple TV's volume as well as your receivers. :D
